Brief de Design de Logo

Hi
I am starting construction on a cafe/restaurant/art gallery/tour desk on Rottnest Island in Western Australia.
I am on a budget (and tight time frame - I need to be open in December) so I am initially going with a bare bones cafe/art gallery that will evolve with the times.
The front of house will be concrete floors, a 3.5m high black ceiling with some funky lighting (there will probably be seating indoors for about 30 patrons but there will be seating outdoors for another 80 patrons so the whole idea of the black ceiling is to combine the 2 areas ie bring the stars inside). There is a very rustic wall of exposed brick and some plaster which we are going to run with as our art wall. The other side is going to be food display cabinets separated by weatherboard cabinetry. There will be a coffee station (I think this will be a big part of the business), a cake station, a juice/smoothie station and a salad station for eating in or takeaway. The walls behind the stations will require a lot of shelving, will have blackboard menus (perhaps with the logo on top?) and some really funky red mosaic tiles. I am hoping to get a liquor license for next summer so there will be a bar at the back of the premise which will be clad in metallic tiles as a real feature. There are also 2 small sections of walls that we will clad in limestone. The menu is going to be contemporary Australian with a real emphasis on fresh and homemade. There is a large al fresco area outside, the seating is going to be mismatched tables and chairs (both inside and out) in primary colours. The idea of the venue is to be non pretentious, with a funky vibe and be in tune with the Island.
Rottnest Island is very special, it is situated 18km off the coast of Perth in Western Australia and receives around 500 000 visitors per year (the permanent population is around 200, the visitors are about half domestic and half international). It is an A class reserve and is very undeveloped. It's appeal lies in it's heritage and natural beauty. It has been an Aboriginal prison, a juvenile detention centre, an internment camp and played a very important part as a signal post and gunnery in both world wars (ships would have to sail past Rottnest to get to Perth). It is now a tourist Island with very rustic accommodation (definitely unlike anything else in the world..) and no cars. Everyone must get around on bicycles. It is consistently voted with the best beaches in Australia, has one of the top 10 surf breaks in the world and is a world renowned diving destination.
For my fit out I feel I am bringing a bit of Rottnest inside (the limestone walls, the polished concrete floors and the rustic art wall) and I would like my logo to epitomize Rottnest also.
The Cafe is going to be called 'Geordie's' since it is located at Geordie Bay. If I was to elaborate on a business card I would follow with 'Eclectic Eats and Art Gallery' but I am a bit unsure of this.
My idea was to feature what I call the "Rottnest Island icons" in primary colours under the name, a quokka (a small wallaby found only on Rottnest, brown in colour), a lighthouse (there are 2 on Rottnest, I guess grey or white in colour), a bike (in red, the only means of transport on the Island), a whale (they migrate past the Island every year, blue in colour) and a starfish (for the diving, yellow in colour). If you google Rottnest you will find many photos of the quokkas and lighthouses, the whales are mostly humpbacks.
I'm not sure what style I would like the name in (hence your ideas!!) or whether I would like the ïcons" to be solid colour silhouettes (kind of like the qantas kangaroo) or to be stylised (kind of like the Weiss style).
How I would like to use the logo would be on the front of the coffee counter so people can see it as they walk past the bifold doors (which will always be open), perhaps above the door outside, perhaps on the top of the blackboard menus and obviously on any stationary (ie business cards, info DLs, menus etc).
Another important thing to note is that for my uniforms I would like my staff to just wear denim and I will have a black T shirt made with the logo either on the front on one side above the chest or across the top of the back. Tourists love everything about Rottnest so if the logo (and Tshirts) are groovy enough I think people would want to buy them since they have all of the Rottnest symbols on them. In that case I would probably have some Tshirts that say 'staff' on them. I am also thinking about having small, black half aprons made with the logo across the bottom. So.. to cut a long story short the logo would have to look good on both a black background (uniforms) and white background (stationary) and compliment the primary colours that I will have in my fitout and furnishings.
I don't know how this normally works but I may need designs for the Tshirts (and other things) as they crop up also.

50% of visitors to Rottnest are Australian, 50% are international (many mixtures). Surrounding the cafe are a lot of yachts (ie wealthy patrons)
