Brief de Design Graphique

I have an existing logo, but am changing the name of my business. I want to keep the shark design as is, remove the references to Simon BJJ, and add the new business name BJJHistory.org. I am open to fonts and styles of the text. Keep the shark design as is. I need one logo the same dimensions as this (portrait sized) for the website homepage and for icons on social media, etc. But I also need a banner sized version that can be used at the top of web pages or bottom or in other areas where I need a more linear version of the logo. For context, the martial art is Brazilian Jiu-Jitsu and I write about the history of it (famous fights, famous fighters, etc.).
