Brief de Design de Logo

I just bought this company and need a fresh new logo to update our brand. I really like Brazen Roofing and Octo Outdoors designs because they use an object not even related to the business, but I’m not sure what to do for that. I want it to be a bold and strong brand. I thought about the bust of a bull made of large stones, but not really sure. Otherwise I would like at least a stout word logo. I also really like a circular logo, maybe just a “U” in a circle. See attached for some examples of stuff I like.
