Brief de Design de Logo

I have a logo here that I would like cleaned up. I like all the elements but would like it made a little bit simpler to make it suitable for printing on a sign etc. I have attached two other designs that I like the simplicity of. I also would prefer it be a paddle style cheese board rather than the round one.
