Brief de Design de Logo

We need a makeover of our logo so that it is more in line with our customers (25/45 years old, trendy, instagram ...) and more easily usable on clothing communication media.
We are a restaurant in the south of France, open in the evening in season
summer and offering our customers a relaxed but very professional place where every detail is important, from the playlist to the decoration.
If possible, we want to keep the shape of the 2 mills integrated in the logo but separable from the text.
The text is made up of 2 elements:
The name of the establishment "Les Moulins"
And the city "Ramatuelle"
The final design should give an institutional, young and dynamic image.
