I am in the Bakery training business here in Singapore and am writing an autobiography of my time over the last 25 years. During this time I have established two professional baking schools from scratch, building curriculum, course content, fitting out with equipment required to teach groups of up to 15 students.
I have traveled the region in China, Jordan, Vietnam etc., teaching baking courses at artisan and Industrial levels operations. Undertaken research and development for large companies and ingredient suppliers, like McDonalds, Potatoes USA. Sara Lee, California Raisins. I have worked with Culinary schools Malaysia and Vietnam delivering bakery education.
My book will be called “Baking in Asia” – with emphasis on To learn, to train , to educate, to bake and to travel. I am setting up a website that will be used as a teaching / consulting tool, looking at techniques and procedures that cant be explained in a recipe. The elements behind the recipe , the process and procedures.
Imagery would have a baking feel, crusty breads, images of artisan breads, wheat, flour ingredients.
