Brief de Design de Logo

We are in need of a logo for our company - Back Forty Distillery - located in St. Charles, Missouri. We are currently making moonshines, rums, and will be branching out into vodkas and whiskeys within the next few months.
Background: The "Back Forty" is a land surveying term that refers to a 40 acre parcel of land that has no road access (it is land locked) and historically would be the place where moonshiners would make moonshine. It typically referred to as the "back woods".
Some potential ideas we initially have include a map with a still (equipment used to make alcohol) as a north arrow; a landscape with a river/stream running through it; image of a still in a landscape; maybe just a still with a landscape image in it ... we're really pretty open
Colors we're wanting to incorporate: blues, and earthy colors - but we need to be cognizant that it can't contain too many colors if we want to be able to use the logo on shirts and merchandise.
Also would like for the logo to translate to black/white and/or a single color version of the logo.
Open to inclusion of company name in the logo, but it could also be in a single line of text under the logo, or along the side; doesn't have to be part of the design. Could put company initials into logo as well.
Looking for 2 types of text: one for the name but then an additional one that can be used on labels that is easily readable by consumers (text is typically very small on bottle labels)
