Brief de Design de Logo

I need a logo design for the rebranding of my bar/restaurant. A Scottish based company, we are located on the shores of the river clyde .We have outstanding views from the unit with the backdrop being the hills toward the Scottish Highlands. The food on offer will be up-market traditional fare. Full bar with cocktails, Scottish craft beers, gins etc. I would like the design to convey quality.
It should also include the colour green.
