Brief de Design de Logo

New Western Restaurant in China. Want something similar to the uploaded file. Would like it to be more compact though. Needs to look good both in black and white, and with bright colors like orange. I would like to use the entire logo without text, or just the "KS" part ,as a brand on steaks and tables, and would like to see what the "KS" looks like as a brand on the bull. I want the logo to communicate this is the place to go for awesome food and in particular western beef.
