Brief de Design de Logo

I've just acquired a bakery that needs a new logo. Our bakery is a very high end Scandinavian Bakery in Seattle, Washington. We currently only have one location, but we are looking to grow. Here are the priorities for our logo:-strong "readability" from the street on signage, as well as on packaging (bakery boxes, coffee cups, etc)-communicate high quality, high-end, premium product; all products made from scratch by experienced bakers using the best ingredients-reflect simplicity of Scandinavian design sensibility-the name Byen is Norwegian for city or village-we like the idea of a vertical oval, but we are not tied to it-logo should be strong and enduring-the pretzel shape is a symbol of bakeries in Scandinavia. We'd like it incorporated somehow into the logo-we are not sure of future color scheme; please render logo in black & white. Feel free to suggest colors. Color scheme will likely include soft gray, so color suggestion should partner well with soft gray.-some thought-starters about our brand. We are generous - known for exceptionally high level of customer service, and our products are generously sized. We embrace the Nordic lifestyle - simple, clean, hygge (cozy and happy and comfortable) and lagom (not too much, not too little)-our current logo can be found at https://www.byenbakeri.com/. We don't like it, as the script makes it hard to read, and the city skyline is irrelevant.-images attached are for inspiraton only
