Brief de Design de Logo

i need a logo design as the first stage of a suite of designs for a new business.
the business is a winebar/deli/coffee shop/bottle shop. the focus of the business is wine and food of integrity and character that demonstrates pride and passion in its place of origin. all the food products and 50% of the wine will be sourced from the Canberra district with 25% australian wines from other localities and 25% from other countries.
there is a fundamental premise of promotion of canberra district wine and food to the local and tourist community. we will also be educating on wine and food and providing a venue for corporate and social tastings, product launches etc.
our customer demographic will be primarily 30-50yo professionals
the design should communicate that we are the expert in wine and also that it is a fun and comfortable space
we will be seen as the go-to place for advice about wine and quality food and wine that can be relied upon to be great.
i like some colourful french wine labels such as Vin de fruits blanc and rouge, sirop de groseilles, georges doboeuf Fleurie i.e. whimsical, beautiful, passionate, artistic
