Brief de Design de Logo

We recently aquired an upmarket retail butchery and continental deli brand. The business has been around for the last 40 years and not much has been done in terms of the logo's & branding of the business.
We want to do a logo "refresh" and from there will move ahead to redesigning the branding & packaging for our retail stores, web design, etc with the selected designer.
The brand has been around for 40 years and has fairly strong brand following thus the "refresh", but would look at a total redesign.
