Brief de Design de Logo

We need a logo for a new high end fashion clothing company called define. Based out of New Zealand would like the final design to be similar to the one
I have attached but much cleaner and refined looking. Would love just black and white No colour. It has to have the accent on the so it should look like this ë. As this that is our symbol for the brand.
