Brief de Design de Logo

We are a small family company called 'Mark J. Floyd Funeral Services' that requires a new logo and letterhead design.
A father and son business which operates in a country area of Victoria, Australia.
We cater for all kinds of people, with different backgrounds, beliefs and budgets and have been in business for 35 years.
Our current logo and letterhead are a mish-mash of design work done in the 1980's. The fonts and design are inconsistent and don't look as professional as I would like.
I am looking for something classic and professional, but not cold or too officious in nature. Our corporate colours are a Mid to Royal blue, however we used to print exclusively on a light blue paper, which didn't look too bad, as the supplier we used discontinued this paper we have had to print on white paper for which a darker Navy blue looks better in my opinion. We also use highlights of gold, or printing the logo in gold on some things, like our vehicles and marquees, so a combination of of Blue with highlights in gold would be preferred.
We head up a lot of our documents and booklets that we produce with the Letterhead/logo and I would like something that is flexible enough to continue to be used in such a way, whether at the top or bottom of a page, on a booklet or and invoice.
I have attached our current letterhead, logo design and a few of the documents we produce for reference.
