What size will poster be?

It will mostly be an online image used for social media. That said, it would be nice to be able to print it at 2'x4' or so.

Can it be landscape?

I would be totally open to a landscape poster. Especially if the design warrants it.

These are the only screen grabs we have. And since we don't want to directly use the photos, and instead want to artistically replicate them, I'm hoping it isn't an issue.

You want yo use the photo, but you want photo altered? can you supply sample or reference?
