Brief de Design de Logo

I have just taken over a cafe that has been running for the last 25 years with the same logo and interior decoration. Now that renovations are set to get underway, I am looking for a new logo to move forward with, and follow in the new clean, modern, sleek design aesthetic I'm bring into the business. The colour scheme will be mostly black, white, grey and red, with splashes of dark timber grain for a backdrop. I am hoping to turn this into a sign out the front as well that will be made from old weather odd slats with a dark stain applied. The name of the business is "Happy Dolphin Cafe", however it is commonly referred to as the dolphin. So any of these options are viable. (I.e. The Happy Dolphin, Dolphin Cafe, Happy Dolphin Cafe)

Currently my demographic is a MUCH older crowd due to the previous owners age bracket, I am looking to bring fresh blood, new ideas and a much younger, hip crowd in to experience what we have to offer
