Brief de Design de Logo

I need a logo for the channel, 'VeganViking'. As a vegan since the late 90's, and one that's very fit, muscular, and edgy looking, I can bring a perspective to people that are trying veganism for the first time, but aren't sure what to do or how to approach things. The dialogue in the channel will be engaging, fun, and direct. The logo should be bold, 'tough' looking. I keep envisioning a pair of stone V's (maybe stacked or interlaced? I dunno) as the feature point, but I'm open to ideas. I'm open to different color ideas, though more earthy/dark tones are what I'm feeling on this (note this doesn't necessarily preclude a minor amount of brightness somewhere for contrast).

Bonus points for viking/nordic knot work if it can be incorporated while keeping the other main goals above. This is not a requirement and might very well make things too busy. I leave it to your discretion :)

Doing a 'V' like in this logo (https://www.behance.net/gallery/9642203/Vargdricka-Scandinavian-Farmhouse-Ale) might be a bit much, but you can also see the other elements in the larger logo there where you get the more flowing organic knot work (celtic knots are more rigid, norse/viking are less so). https://s-media-cache-ak0.pinimg.com/236x/d2/78/89/d278898f681af68923a59fc1b86ae397.jpg is another good example of viking knot work.
