Brief de Design de Logo

Hello I am looking for a designer to design our logo for our restaurant. The name of the restaurant is: Ponzu Poke. I was hoping for two separate designs. One that is circular (like Chipotle's logo) and one that is regular. I am attaching a word document that kind of shows what I am looking for in the regular design part of it. I am open to different colors, but leaning towards orange or red. This is a restaurant serving raw fish in a bowl over rice, so perhaps a design of a fish somewhere would be great. Please let me know if you have any questions.
