Brief de Design de Logo

We are starting a micro-distillery in central Missouri, USA. We need a logo that will represent our company and will appear on our vodka, whiskey and cordial bottles, letterhead, business cards, signs and other misc. merchandise.

Our distiller and founder is also a woodturner and lovingly creates wood hats. We like rustic and must have an image of a hat in this logo. We will attach images of his hats for inspiration. Since each hat has a unique style, we are not married to a single hat image. The designer may take liberties with the shape of the hat. However, we would like to avoid the cowboy hat shape. We would like the hat or "man in hat" to be more like a line drawing, that is, with a few lines suggesting the image. We want to project the following:
unique, wholesome, quality, social consciousness, handmade from scratch..."field to glass"...We are raising or locally obtaining the grains and fruit, as much as possible.

We like the concept of "spirits" meaning both the alcohol and more ethereal connotations. So, we would like a script that looks hand written somewhere between printing and cursive. But the type style must be easy to read. We have no set color scheme in mind.
