Brief de Design de Logo

I am looking for a logo for my artisan beverage company, Orion & Byrd. We are specializing in drinking vinegar & home-brew style root and ginger beer.

The business has all the trappings of the farmer's market, homestyle and folksy products but I want the brand to feel far more elegant than that. It is meant to appeal to the younger, urban crowd as they are now delving in to the organic, local, and DIY scene.
